Super Simple Fruit Crumble

20160610_195220This couldn’t get any easier. Again, while at my friend’s place, she wanted me to make a dessert. To tell the truth, I wasn’t in the mood – it had been an exhausting couple of months prior to this visit and I just wanted to relax – but she loves my cooking/baking, so how do I say no?

I dug in her freezer and found a bunch of frozen berries. I used blueberries and raspberries for this dessert. I didn’t add any sugar to it because the fruit wasn’t all that tart.

About 6 cups of fruit. Any berries will work.20160609_181825

Place in a cooking pot with about 1/2 cup water and simmer on very low until the fruit is well cooked.

Place 3 Tblsp cornstarch in about 1 cup ice cold water, and mix thoroughly, slowly stir into the hot fruit over low heat, and let bubble gently while stirring until it thickens.

Pour into a greased baking pat with at least a 2 inch edge.

For the crumble…

She didn’t have any flour, because she’s gluten free, so I used about 1 cup gluten free Bisquick mix, 3-4 Tbls softened (not melted) butter, and 2 Tblsp sugar. Using a fork, work butter into the flour and sugar until it’s crumbly. With hands, sprinkle over top of fruit.

Bake at 400 degrees 10-15 minutes until crumble browns.

Easy peasy! And her boyfriend LOVED it!

Served with vanilla bean ice cream, of course.
