Seafood Noodles and Sauce

seafoodI called it fettuccine when talking to my husband, but it’s far from it. It’s a white sauce with garlic, throw in a variety of seafood, spinach and onions, and then mi in a batch or two of noodles. It is super yummy, so whatever you want to call it, it’s absolutely tasty!

  • 8 oz Chopped or minced clams (canned)
  • 1 lb shrimp – cooked, shell removed
  • 1 lb king crab – cooked, shell removed
  • 1 bunch spinach – chopped
  • 1/2 large sweet onion – sliced thin
  • 2-3 cups milk
  • 8 oz cream cheese
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan
  • 2 Tbls bacon grease (or olive oil)
  • black pepper
  • sea salt
  • 2-3 packages cooked noodles
  • green onions for garnish
  1. Open clam cans and drain juice into a 6 quart pot.
  2. Add milk, onions and cream cheese. Cook on low, stirring, until cream cheese is melted.
  3. While the onions are wilting, in a fry pan, heat grease (or oil) and add chopped spinach. Cook until wilted. Add to the milk mixture when the cream cheese is melted.
  4. Add sour cream and grated Parm, salt and pepper.
  5. Remove from heat when bubbly.
  6. Add seafood and noodles and mix well.
  7. Top with green onions and a little extra pepper.
  8. ENJOY!
