The recipe that follows is not for the picture shown. This picture is of my banana bread, which really has no recipe. I literally throw things in a mixing bowl until it’s the right consistency. My basic ingredients are as follows: mashed bananas, flour, eggs, cinnamon, nutmeg, cloves, baking powder. My recipe is based on the number of brown bananas I have at any given moment. With this particular batch, it was about 8 bananas I got marked down at the veggie stand. It made two large loaves of bread. To make the pretty top, and it would work with any recipe… I had a frozen Baby Ruth bar in the freezer, which I took my meat mallet to and sprinkled it over the top before I baked it.
Here is my mom’s recipe – what I grew up on and still love.
She says this recipe is older than her. Enjoy!
- ¾ cup sugar
- 1 cup mashed bananas
- ½ cup vegetable oil
- 2 eggs
- ½ tsp salt
- 2 cups sifted all purpose flour
- 3 tsp baking powder
- 1 tsp vanilla
- 1 tsp cinnamon
Mix everything together and place in regular size loaf pan.
Bake 350 for aprox 45 min or until done by toothpick test.
Makes 1 loaf.
