Rotisserie chicken from Costco is one of my favorite take-out foods. I love it hot or cold, made into casseroles, broken down and used in lasagna, and my all time favorite – Chicken salad.
This recipe is so simple it’s ridiculous, and soooo tasty on a nice roll with tomatoes and lettuce. And better yet, sometimes – like tonight – I cooked down the bones and skin and made chicken noodle soup. Perfect together.
All you need is a couple of cups of chopped chicken or turkey, Miracle Whip (see homemade recipe at bottom for more zip), green onions and black pepper.
Throw the chopped chicken into a big bowl, add the onions and pepper to taste, and then just enough of the Miracle Whip so it sticks together (and won’t fall off the bun).
If you don’t like Miracle Whip, of course regular mayo is fine. I’m very much a mayo person, except where poultry is concerned. I put Miracle Whip on 3 things. Turkey sandwich, Chicken sandwich, and BLTs (I don’t know why, I just do.) My husband is strictly a MW person and doesn’t like regular mayo on anything.
I found this recipe on a low-carb website – because Miracle Whip has carbs – and I love it. It’s Miracle Whip – which advertises it has zip – with more zip! Now I only buy Mayo and make my own faux Miracle Whip, which hubby loves. Only problem is it’s slightly runnier than regular mayo/MW so it’s not great if you’re someone who likes to really goop on the dressing.
Homemade Miracle Whip Recipe:
- 1 cup Mayonaise
- 2 Tblsp white vinegar (I’ve tried it with apple cider and it’s not as good)
- 2 Tblsp Splenda (or 3 drops liquid sucralose)
Mix well. keeps in refrigerator for weeks.
