I don’t even remember where I found this recipe, but I’ve been carrying it around in my day book for weeks, looking at it fairly regularly and thinking – really? these ingredients are going to make a cake? It’s way too easy to be real. But I tried it because it has no added sugar and all the ingredients are really really healthy and you’re likely to have most of them (I had to buy the almond milk because ewwww, almond milk?) in your cupboard already.
I finally tried it last night. It took me about 5-7 minutes to put it all together and about 20 minutes to bake it. I didn’t believe it would turn into a cake when I put it in the pan – I got a wonderful surprise when I took it out.
3 ripe bananas, mashed
1/3 cup apple sauce (I used sugar free)
2 cups oats (I used large ones, though I might try it again with the smaller ones)
1/4 cup almond milk
1/2 cup raisins (I’m going to try dates next time, and maybe even dried cranberries)
1 tsp vanilla
1 tsp cinnamon
Mix it all together, munch it down into a square cake pan, and bake at 350 for 15-20 minutes. Mine definitely took 20 minutes. I cut it into squares – like I would Rice Krispie squares – had one still warm from the oven, put the rest in a container in the fridge,and it tasted just as good when I got home from work today.
I think this is one of the things your kids would love to take to school.
