Mexican Pizza – Ten million times better than the Bell’s!

Mexican Pizza with my favorite salsa.

I don’t make these often, but I’m not sure why. It’s always a winner in the house when I do. I put mine on a salad instead of the flat bread, but the flavors are awesome, and it’s easy!

  • Flat bread – Naan, soft tortilla shells, or Flatout™
  • 1 can refried beans. I use the fat-free variety, but any kind you like will do.
  • 1 lb ground meat. I use extra lean beef or turkey
  • 1 white onion – chopped
  • tomatoes – diced small
  • green onions – chopped
  • lettuce – shredded
  • 1 package taco seasoning mix (I use Mrs. Dash)
  • shredded cheese – about a cup
  • sour cream and salsa for toppings (optional)
  1. Cover jelly roll pan with tin foil and spray with non-stick spray.
  2. Lay out your flat bread or tortilla shells
  3. Brown ground meat in fry pan with white onion.
  4. Add the taco seasoning and mix well. Do not add the extra water that the package tells you to. You want a dry meat mixture.
  5. Set aside when done cooking.
  6. Spread a layer of refried beans on each flat bread. About 1/4″ thick or so.
  7. Layer on a nice batch of the meat/onion mixture.
  8. Add tomatoes
  9. Sprinkle liberally with shredded cheese.
  10. Add green onions on top.
  11. Bake for 10-15 minutes at 400 degrees, or until cheese is melty and flat bread is as crispy as you like it.
  12. Add some shredded lettuce on top and dollop salsa and sour cream.
  13. Enjoy!
