Cookies, cookies and more cookies – Oatmeal Cookies

I’m a huge fan of oatmeal, I eat it for breakfast three or four times a week. I also love oatmeal cookies, especially when they’re just a little bit soft. You’ll have to experiment with your oven to get them cooked to the texture you want them. I haven’t tried cooking them in my new oven, but I’ll have to try this again and see how it goes.

Oatmeal Cookies

1 cup coconut
1 cup oatmeal
1 cup flour
1 cup brown sugar
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/4 lb. shortening
1 egg (beaten)

You might want to add some raisins. I like raisins in my oatmeal cookies.

Mix all dry ingredients, rub in shortening, then add an egg. Roll into balls, place on greased cookie sheet, press with floured fork and bake in 375 degree oven until done. For me, that’s generally somewhere between 9 and 10 minutes.
