As my mother would likely have said, I’m a day late and a dollar short for my Friday post – mostly because I put in twelve hours at work – 8 at the office and another 4 at home – and didn’t realize until I was half asleep that I’d forgotten to do my post…
So here it is. Quick, easy, and absolutely terrific –
Take two whole wheat tortillas, cover them with peanut butter. Cut up a banana and roll it into the tortillas. Use whatever fruit you have on hand. I tend to buy whatever’s on sale at my fruit and vegetable store up the street. Right now, that seems to be strawberries and kiwi. I also always think about color and, as you can see, strawberries and kiwi are gorgeous together, kind of like Fred Astaire and Ginger Rogers! Sprinkle a tiny bit of raw plantation sugar over the fruit. Add a cup of tea (or coffee, if you prefer) and you’ve got a healthy breakfast that looks good, tastes fantastic, and is healthy on top of all that.
