I’ve told you this before, but quinoa is my least favorite of the ancient grains. I know it’s good for me, so I try to eat it occasionally. This salad is one of the ways I do that. Quinoa is a grain from South America and this is what it looks like when it’s growing. Beautiful, isn’t it?
I tried this salad at a potluck meal and really enjoyed it, and have been making it ever since when I feel as if I have to eat some quinoa in place of couscous or barley or… It’s also a terrific item to take to a potluck or serve at a party.
Susan’s quinoa salad
2 cups of cooked quinoa, cooled
1 slivered thin red pepper
2 oranges cut fine and the zest
2-3 green onions thinly sliced
3 tbs. olive oil
2 tbs. lemon juice
1 clove of garlic minced
cumin to taste
1/2 cup raisins (cut into quarters)
cilantro to taste
3/4 cup of crushed almonds
Mix together, chill. It’s better the next day as the flavors need to mellow.
