Every Christmas Eve, my family did a gift exchange. We normally had 50+ people in attendance, and at Thanksgiving dinner we
would do a name draw for the Christmas gift exchange. Kids drew kids; adults drew adults. That was all fine and dandy, but the very best part of the gathering, at least to me, was all the fancy finger foods. We didn’t have our big Christmas turkey dinner until Christmas Day, so Christmas Even was finger foods.
This recipe is one of my all time favorites of my mom’s. I always thought it was difficult and labor intensive, because it tastes so good. But I just put mine together in an hour and half, and that’s including slicing the smoked summer sausage to go with it.
There are two versions. The one I made is rolled in the onions and bacon crumbs.
The other version is putting the onions and bacon into the cheese and then rolling it in chopped nuts. Both are fabulous!
1 jar Kraft Old English cheese spread
1 -8 oz block philly cream cheese
1/4 cup crumbled blue cheese or feta (depending how strong you like it)
1/2 tsp granulated garlic
Mix cheeses in bowl, cover with plastic wrap and firm in freezer 1 hr. Roll into ball.
1/4 cup finely chopped green onion
bacon crumbles
chopped walnuts or slivered almonds (optional)
Chill until ready to serve and ENJOY!
